Use the 400 grit side first - this should be more course compared to the other. Once one side of the blade has been sharpened, ensure to flip the blade (still keeping it blade side up) and sharpen the other side. After a new edge is created, hone with the other side (1000 grit)

Yes! Well mostly - we wouldn't recommend sharpening a serrated knife but any other smooth-edged knife can be sharpened with our Rolling Knife Sharpener.

To adjust the height (needed for larger knives), simply prop up your barrel on a sturdy flat surface (we like to use a chopping board) and you will be able to sharpen those bigger knives.

No. The rolling action, coupled with the magnetic block holding your knife in position, means there is little risk of damage to your knife. The disc shaves small amounts of metal each swipe so test it's sharpness until you've reached the desired razor-sharp edge you're looking for.
