Hi, my name is Emily. Growing up, I'd watch my mum sharpening her knife every other week with, what seemed to me at the time, a sword. It made sense at a young age, "of course, why wouldn't you sharpen a knife with something else that is sharp", plus it looked really cool watching her effortlessly drag the knife back and forth with such speed and precision, it was exciting - like a knife and sword trick at the circus!

It wasn't until high school hospitality class that I thought I'd like to try mum's trick at home and found it was not as easy as mum made it look. But I'd still practice, eventually getting to a speed that I felt would impress any onlookers as it once did me.

Fast forward to when I first moved into my then boyfriend, now life partner and successful head chef, Alex's house. Alex didn't use a sword (later finding out it was a honing rod) to sharpen his knives, but not only that, honing rods don't even sharpen knives - as the name describes - it hones.

Living with Alex, I'd watch him sharpen his knives with whetstones, he even taught me how to sharpen our home knives - as his work knives were separate from our home knives - so our home knives became my little project. But I could never get ours as good as his work knives. I simply didn't have the skill, patience or accuracy. I needed an upper hand. That's where CutCraft was born.
